As the organic industry steadily gains broader distribution and wins greater consumer acceptance for its products, Nutrition Business Journal has been scouting for the first signs of maturity but spotted few so far. Growth figures were almost as robust in 2005 as in recent years, with sales approaching $13.5 billion, according to preliminary NBJ research. With projected growth of 14% in 2005, organic food remains one of the most rapidly expanding niches in U.S. foods.
