Ms Kennison described Symrise’s custom developed LC Taste® as an advancement over standard liquid chromatography, enabling more rapid and more accurate development of taste active materials. “LC Taste® is both fast and accurate, allowing us to develop exceptional masking compounds and sweetness enhancers. We are able to isolate active components through fractionation so these become concentrated, targeted taste modifiers,” she stated.
As an example, Ms Rosa spoke of how LC Taste® was used to identify and isolate the most effective components for masking bitterness from the Herba Santa plant. Symrise has patented this material, homoeriodictyol (HED). “Essentially, HED enables blocking of the bitterness in materials such as caffeine. Most importantly, HED doesn’t cover up bitterness by adding flavor, it actually blocks the bitterness,” she explained. She added that LC Taste® technology also enabled Symrise to clearly identify components of the stevia plant that contribute to off-flavors, isolating those substances that could effectively mitigate the unpleasantness.
Explaining the implications of LC Taste®
The LC Taste® analytical method allows Symrise to identify and screen non-volatile substances and non-volatile masking systems for taste dose activity on negative testants, using proprietary extraction and preparation techniques. Symrise analytical professionals inject extracted flavor materials into the LC Taste® system in order to evaluate eluting regions in real time. Following this procedure, a second screening is conducted using the LC/MS for identification. This allows for simultaneous sensory and analytical methodologies to merge into a single tool for evaluation by trained panelists. In this way, Symrise is able to identify the taste-active components that contribute to off taste, and then create the most effective masking system.
