Danisco range of protective dairy cultures now has broader spectrum control of contaminants.

DuPont Nutrition & Health has expanded its range of protective dairy cultures with the introduction of HOLDBAC® YM Plus, part of the DuPont™ Danisco® range.    

Controlling contamination of fermented dairy products by yeast and mold is one of the greatest challenges facing dairy manufacturers. HOLDBAC YM Plus is a powerful new weapon against spoilage, to help you ensure production of longer-lasting, fresher-tasting fermented dairy products.

More effective solution
By controlling a wider range of difficult fungal contaminants, in particular spoilage yeast isolated from fermented dairy products, HOLDBAC YM Plus is designed to meet the specific needs of dairy manufacturers who, despite the challenges of cold-chain logistics, cannot afford to risk their brand image to product failure. What’s more, like many other cultures in the DuPont™ Danisco range, it presents clean label credentials which are at the forefront of consumers’ minds.

Broader inhibition spectrum
A unique blend of selected and patented strains of Propionibacterium andLactobacillus creates a broader inhibition spectrum. This contributes to increased effectiveness in preventing spoilage from yeast and mold growth, and promotes longer-lasting, fresher-tasting fermented dairy products.            

As there is no change to the manufacturing process, yours will remain as simple and efficient as it is today, the cultures can simply be added to the milk together with your starter culture. They can be deployed across a wide range of fermented dairy products such as yogurt, quark, tvarog, white cheeses and sour cream.
