Wheat-flour ingredient for reduced-fat desserts
National Starch Food Innovation has introduced a product to the North American market that reduces the fat content of baked goods by as much as 60 per cent. Based on National Starch's speciality flour, HOMECRAFT Create 765 allows for the formulation of reduced-fat dessert mixes, cakes, pastries and cookies with texture and sensory properties that closely match a full-fat standard. The ingredient also reduces the fat fraction in the raw materials, boosting transport and mixing. It carries a wheat-flour label declaration, so producers do not have to change their ingredients list.

Four extracts added to product line
BI Nutraceuticals has added four extracts to its product line; they are elderberry, rosemary, mangosteen and yerba mate. Elderberry, a 4:1 ratio extract that can be used to boost antioxidant properties, is available in a water-soluble formulation for use in beverage applications. Rosemary is standardised to a 2.5 per cent rosmaric acid. Mangosteen is available in a water-soluble formulation for use in beverage applications. Yerba Mate, available as a 4:1 ratio extract or an extract standardised to 20 per cent caffeine, has been engineered to have a very clean taste for food and beverage applications. BI sells more than 600 ingredients, more than 200 of which have been deemed GRAS by the FDA or FEMA, the Flavors and Extracts Manufacturers Association.

Rosemary extract now for beverages
Vitiva's AquaROX 10 is a natural water-soluble rosemary extract for clear, hot-filled beverages; it maintains its ORAC activity even at high processing temperatures. The ingredient was created because traditional rosemary extracts on the market are not suitable for beverage applications due to the undesirable taste, flavour and colour they add to the final product. AquaROX 10 has a bland taste and natural colour, making it ideal for beverage applications, Vitiva explains. AquaROX 10 is standardised to 10 per cent rosmarinic acid, doesn't affect organoleptic characteristics of the beverage, is heat stable and can easily replace green tea in beverage applications. Rosmarinic acid is found in substantial quantities in the Labiatae family and its pharmacological properties include antioxidant, antibacterial, antiviral and anti-inflammatory.

I-Sabi research in white paper
BioCell Technology has issued a white paper on its patent-pending i-Sabi dietary ingredient, which is made from the plant rhizome of Wasabia japonica, more commonly known as wasabi. Wasabi contains a wide spectrum of bioactives, including antioxidant, liver-protective, anti-inflammatory, anticarcinogenic, immunomodulatory, neuritogenic and antibacterial properties. Wasabia japonica is a member of the Brassicacea or cruciferous vegetable family. Among the plant's bioactive compounds is 6-HITC (6-methylsulfinylhexyl isothiocyanate) which has been shown to harbor the widest range of potential health benefits. I-Sabi, developed by BioCell, contains approximately 15,000ppm of 6-HITC, higher than other commercially available wasabi products, and is sold as a freeze-dried powder, which can be formulated into capsules, tablets and soft gels.
