Inspired by the goal of providing a more sustainable water supply for future generations, Pat Crowley, a former agricultural water planner, started making protein bars out of crickets. As Crowley explains to New Hope Network’s Bill Giebler at Natural Products Expo West 2016 Business School, the only reason we don’t eat crickets in the U.S. is cultural.
