Mild flavor: Yo-Fast 20 develops a very mild flavor and has high-texturing properties, which make it possible to reduce or even replace the use of additives like stabilizers or gelling agents. This is particularly attractive in children’s products. Furthermore, minimal post-acidification guarantees longer shelf life of products.
High mouth feel in low-fat products: Yo-Fast 20 offers a high mouth feel and creaminess to low-fat products. These attributes have been very difficult to obtain with traditional cultures.
