Fuji Health Science, Inc. has announced its plans to introduce a new powerful natural antioxidant for use in food at the Institute of Food Technologists (IFT) Annual Meeting and Food Expo to be held in Chicago, July 17–20, 2010.
The new antioxidant is AstaREAL® astaxanthin, which has recently attained GRAS status from the FDA in January of this year. Astaxanthin is an antioxidant with an excellent safety history which has been naturally in the food chain since the beginning of time. It is found abundantly in marine life and is what gives the red and orange color to shrimp, lobster and salmon.
Astaxanthin is a member of the carotenoid family of natural pigments closely related to beta carotene, lycopene and lutein. It is a biological antioxidant known for its ability to better protect against singlet oxygen, one of the most damaging of all reactive oxygen species (ROS), than any other known antioxidant. Also, because of its unique structure it has a superior ability to protect the membrane of cells throughout the body from lipid per-oxidation.
