Greek yogurt texture solution featured in new white paper

Paper presents manufacturers with the ability to produce Greek-style yogurt without straining, while maintaining consumer texture expectations.

Ingredion Inc., a leading global provider of ingredient solutions to diversified industries, presents a novel approach to Greek-style yogurt production in its new white paper titled: “Achieve Rich, Creamy Texture in Greek-Style Yogurt with a Cost Effective Approach”. The paper, which is the first in a series of texture research and solution developments, presents manufacturers with the ability to produce Greek-style yogurt without straining, while maintaining consumer texture expectations.

Ingredion marketers recognized the rapidly growing popularity of Greek yogurt. To gain insights into the range and diversity of products on the market, sensory and rheology experts characterized and mapped the texture space of a number of Greek-style yogurt products on the market. The company also gleaned critical insights into consumer motivations around Greek-style yogurt, through a focus group with Greek yogurt-eating consumers.

Ingredion researchers discovered that texture is a major determinant of Greek-style yogurt selection – nutrition and price were also identified as key deciding factors. These findings also suggested the need for a cost effective alternative Greek-style yogurt production method that delivers the thick and creamy texture consumers’ desire. The company then applied its sensory, rheology, process understanding and application expertise to develop the solution.

“Greek-style yogurt products can be made on typical stirred or blended yogurt processing equipment, avoiding the significant capital investment into straining equipment, for significant cost savings,” said Suzanne Mutz-Darwell, Sr. Market Development Manager, Texture with Ingredion Incorporated. “By combining our ingredient solutions, such as NOVATION® and PRECISA® texture systems, with our technical assistance, dairy processors now have the ability to create the thick, rich and creamy Greek-style yogurt style texture consumers desire.”

The paper provides a detailed summary of Ingredion’s consumer focus group findings, descriptive sensory evaluation, texture mapping, and product development work.
