Kemin Food Technologies technical sales manager, Terence Welby, will present at “L’Oxydation des Produits Alimentaires” - a technical training seminar organized by Adría Developpement. The conference began yesterday in Paris and will conclude today with Welby’s presentation.
Welby’s presentation entitled: "Antioxydants et mélanges antioxydants commerciaux: exemples d’utilisation" will focus on practical examples of commercial applications in which antioxidants are used and the timing of adding an antioxidant throughout the production process. Regulatory information on the use of antioxidants will also be discussed.
Degradation of food ingredients involves changes of flavors, colors, reduction of nutritional qualities and even toxicological implications. There are methods available to measure this process but first and foremost, it is important to understand how degradation occurs. This understanding will guide the selection of effective practices and solutions to eliminate or reduce degradation of food ingredients.
