Rice starch to cut the fat
The new Remyline AX-FG-P speciality rice starch can reduce fat uptake in tortilla chips by up to 50 per cent, A&B Ingredients says. The starch also reduces breakage, improves machinability during processing and can increase the crispiness of the chips. Remyline AXS-FG-P is used at a level of 2-5 percent, replacing part of the corn flour used. Remyline AX-FG-P is a ?native starch? produced through a natural process. It is labelled as ?rice starch? on the finished package label. Organic sweetened cranberry

Shortening sans fats
Loders Croklaan has created SansTrans RS39 T20, a reduced saturate, trans-free, nonhydrogenated all-purpose shortening. SansTrans offers the same functionality as traditional bakery shortenings but with 30 per cent less saturated fat than typical trans-free alternatives. SansTrans RS39 T20 is a shortening based on palm and canola oil, and is nonhydrogenated; no trans fatty acids are produced during its manufacture. The product is naturally saturated and its solid fat crystallizes readily in the ideal beta-prime form. The ingredient has several advantages over traditional bakery shortening, including: reduced saturated fat, lower cost, comparable oxidative stability and improved processability. It is 100 per cent vegetable oil and kosher certified.

Calcium for syrups fortification
Gadocal Extreme from Gadot Biochemical Industries is a highly soluble calcium source for the fortification of syrups and concentrates. It ensures a stable solution while reventing the sedimentation of the calcium, GBI reports. Syrups and concentrates pose a challenge because the solution cannot precipitate or influence the organoleptic characteristics. New bakery enzyme to boost durability
Danisco Specialities' new bakery enzyme is the result of several years of collaboration with Genencor, which Danisco acquired in the spring of 2005. The enzyme with the commercial name GRINDAMYLTM POWERFresh extends shelf life of bread products, reduces crumbliness and improves flexibility, making it particularly suitable for tortillas and hot dog buns, Danisco explains. Calcium citrate compound
Gadot Biochemical Ind's patent-pending calcium citrate compound, branded as Gadocal K for soy milk and milk drinks, is designed for calcium fortification of soy milk, fluid-milk, smoothies, infant formula and other milk replacements. The physical characteristics were developed to maintain a stable suspension without a gritty mouthfeel. The addition of Gadocal K to dairy alternatives causes no sedimentation and no protein coagulation. Gadocal K can be added up to a level of at least 300mg per serving (240ml ~ 8oz.), comparable to cow's milk. Gadocal K is a unique form of calcium potassium citrate. It contains about 15 per cent elemental calcium and six per cent elemental potassium, and is designed to maintain complete dispersion capability when added to solutions with a neutral pH.

40% co-Q10 emulsified powder
Kaneka Nutrients of Texas has launched a new product, KanekaQ10 EP40AN. An all-natural emulsified powder, EP40AN is non-GMO and all components have GRAS status. It is water based, so it can be used in a wide range of products including hard capsules, chewable tablets, drinkable jelly and energy bars. It contains 40 per cent co-Q10 — which is higher than that of other emulsified powders, Kaneka says. The ingredient's composition is: KanekaQ10, 40 per cent; lecithin,19.5 per cent (including enzyme-modified lecithin); maltodextrin, 24.3 per cent; and sodium alginate, 16.2 per cent.

Red palm cooking oil
Carotino Cooking Oil, a new kind of red palm cooking oil, has a brilliant red colour and numerous healthy dietary components. The oil contains the pulp of the fruit, not the kernel, of Malaysian red palms, as a key ingredient; is 100 per cent natural, and is both vegan and kosher. Its light taste will not overpower delicate dishes, and it can withstand high heat without burning, enabling it to replace oils in any recipe. The oil has high levels of vitamins A and E, as well as beta-carotene. It is trans-fat free and contains omega-3 and 6 fatty acids.

Natural vitamin K2
PL Thomas & Co of New Jersey has unveiled Natural Vitamin K2 as a proprietary extract under the trademark MenaQ7. Natural Vitamin K2 helps keep calcium in the bones and out of the arteries, the company reports. MenaQ7 provides Natural Vitamin K2 as an extract of natto, a fermented soy food from Japan. Natto is particularly rich in the highly bio-available form of vitamin K2 called menaquinone-7 (MK-7). Studies of Natto consumption in Japan have linked menaquinone-7 to greater bone health and reduction in risk factors. PL Thomas entered into an exclusive agreement with NattoPharma, UK, to distribute Natural Vitamin K2, which is produced in Japan.
