Nicola Twilley is author of the blog Edible Geography, co-founder of the Foodprint Project, and co-director of Studio-X NYC. Her current work explores the relevance of the landscape of artificial refrigeration as the cornerstone of our modern food system. Twilley spoke with NBJ about the pros and cons of the “coldscape,” the sustainability of a speculative food system, and some creative ways to get food consumers closer to the source.
