Coincidentally on the heels of my last post ... Vegetarian Times just sent out news that 3.2 percent of U.S. adults, or 7.3 million people, are vegetarian, and 1 million of those are vegan (0.5 percent). A bunch more people, 10 percent according to VT, "largely follow a vegetarian-inclined diet." According to our surveys, that's the DL reader: last time I checked, about 8 percent of our readers say they're vegetarian or vegan. That's why we emphasize vegetable-based dishes, but we also include some meat and other animal products (healthy versions, of course!). How does our recipe mix strike you?
