Peach season greeted me rather mockingly: A truck at the farmers market had a sign reading, "Out of peaches. They'll be back next Wed. and Sat." Now that peach season had finally arrived, I was determined to find this delicious summer fruit immediately. And once I did, I had to prove that my efforts weren't, well, fruitless, and make something extra special with my bounty. I found some ripe peaches, and I must admit I really wowed everyone with Grilled Peaches and Cream, a fresh take on an old classic that took just minutes to prepare!
I used agave nectar instead of honey. And while I did include the vanilla, and enjoyed the depth it added to the the mascarpone and agave mixture, I might leave it out next time for a bit less sweetness. I topped the peach halves (don't panic if they look more like peach blobs than perfectly shaped halves; they taste just as good) with blackberries, since I already had them in the house. Tip: Scoop the cream on the peaches right before serving. The coolness is a great contrast to the peaches, warm off the grill.
