Anyone starting a gluten-free diet may have a tendency to overindulge, says Lara Field, pediatric dietitian at the University of Chicago Celiac Disease Center. “When you’re able to eat gluten-free pasta, and you haven’t been able to eat pasta before, you’re happy and you may have a tendency to eat more than you normally would.” As with any diet, portion control is key, she advises. Customers should also keep in mind that a lot of gluten-free foods aren’t fortified with additional nutrients. “I think the priority is to make gluten-free products tasty rather than ensure adequate fortification,” Field says. Suggest shoppers support their new diets with a general multivitamin.
