Packaged: the new wave of raw foods

When you hear packaged, you think processed for good reason: Many of your favorite foods have likely been baked, fried, or otherwise highly altered. But now that manufacturers are cutting out high-temperature processing steps, you’ll find more and more packaged products boasting a bold, unusual claim: raw. Raw bars—often higher in nutrients and enzymes and lower in unhealthy ingredients—are the fastest growing raw category, according to UNFI, a natural- and organic-foods distributor. But you’ll also find raw chocolate, cookies, crackers, superfruit powders, and even prepared foods at your natural products store.–
