Ingredients and innovation roundup from IFT 2012

"Purity" and "health" were the words of the day at the 2012 annual Institute of Food Technologists (IFT) meeting in Las Vegas, Nevada, from June 25 to 28.  It seemed like every exhibitor offered "clean label" ingredients or technologies, and every seminar touched on obesity and diabetes if it didn't focus entirely on those issues.
