Raw Mango, Goji, and Lime Smoothie

Mango and goji berries are full of flavors and nutrition, including vitamin C, beta carotine and iron.  Blended with lime they make for a healthy, delicious smoothie.

Serves 4 / Tart-sweet goji berries are rich in vitamin C, beta-carotene, and iron, and have been used in Chinese medicine for more than2,000 years (folklore maintains that gojis even improve attractiveness). Enjoy them sprinkled into tea, on soup or salad, in trail mix, or straight out of the bag. The more ripe your mango, the less sweetener you’ll need for this smoothie. If you can’t find fresh Thai baby coconut, look for packaged coconut water, available in natural foods markets.

4 cups cubed fresh mango

2 cups Thai young baby coconut water, or filtered water

2-4 tablespoons agave syrup, honey, or maple syrup, to taste

1/4 cup goji berries

3 tablespoons fresh lime juice

1. Place all ingredients into a blender; blend until smooth. Will keep for 2–3 days, refrigerated.
