To gain insights into the range and diversity of products on the market, sensory and rheology experts characterized and mapped the texture space of a number of Greek-style yogurt products on the market. Ingredion researchers discovered that texture is a major determinant of Greek-style yogurt selection – nutrition and price were also identified as key deciding factors. These findings also suggested the need for a cost effective alternative Greek-style yogurt production method that delivers the thick and creamy texture consumers’ desire. The company then applied its sensory, rheology, process understanding and application expertise to develop the solution.
