Probiotics pioneer will present "Selection Criteria for Probiotics" at Probiotics-2012 in San Antonio, Texas, Nov.19 to 21.

Probiotics-2012 will bring together an international mix of biotech, food processing companies and leading universities to share experience, foster collaboration and evaluate emerging technologies in the field of probiotics. This conference will address basic research, clinical trials, regulatory efforts and development of industrial technologies. Leading scientists will present and discuss current advances in the research of probiotics. The scientific program will focus on current advances in the research, production and use of probiotics with particular focus on their role in maintaining health and preventing disease. 

Dr. S.K. Dash to present criteria for selection of probiotics
The functional qualities of probiotics relate to the specific strain of micro-organism used, combined with critical techniques for commercial production and handling of the probiotic organisms. Dr. S.K. Dash, adjunct professor at South Dakota State University, has been a leader in the probiotic field since 1979. He has made many contributions that have furthered the field including; definition of the properties of bacterial strains that make them a good probiotic and the specific requirementsof manufacturing and handling probiotic strains for commercial viability. His presentation on Selection Criteria for Probiotics will address strain identity using genetic techniques and in vitro testing to establish probiotic qualities like acid and bile resistance, resistance to digestive enzymes, adherence to human epithelial cells, potential anti-microbial activity, affect on immune cytokines and sensitivity to common antibiotics.  Recent human and animal research on probiotics will be reported. Dr. Dash will also describe stabilization techniques to ensure viability of probiotics throughout the supply chain along with Good Manufacturing Practices and considerations for condition-specific probiotic blends. The regulatory environment for probiotics continues to be an important consideration for selection and Dr. Dash will address regulations in the U.S., European Union and Canada.
