Virginia Dare has developed a range of masking flavours to optimize the taste profile of foods and beverages sweetened with stevia. Custom formulated for applications such as beverages and dairy-based foods, these ingredients effectively mask the bitter, liquoricelike and astringent notes often associated with the sweetener. "Stevia exhibits a range of off-notes that we have found can be effectively masked through skillful selection of combinations of flavour ingredients," the company says. "The end results are very pleasing flavour profiles in a wide array of food and beverage products."
High-concentrate fenugreek extract
TSI Health Sciences, a developer, producer and marketer of fine chemical ingredients, has created a highly concentrated fenugreek extract standardised to 60 per cent 4-Hydroxyisoleucine (4-HI). The PromilinPro ingredient is designed to allow formulators to achieve a daily efficacious dose with the highest possible level of 4-HI. Like Promilin with 20 per cent 4-HI, PromilinPro is a matrix of amino acids that works in synergy with 4-HI. Studies show the Promilin line significantly increases the rate of post-exercise muscle glycogen resynthesis by 63 per cent when compared to placebo in trained male cyclists. It helps improve endurance during aerobic training by sustaining glycogen stores, the company says. Also, 4-Hydroxyisoleucine is proven to have a direct effect on the enhancement of insulin sensitivity in humans.
High-performance starch replacer
Ulrick & Short has expanded its clean-label product range, Synergie Supreme, with the addition of Synergie 55, a high-performance modified-starch replacement derived from waxy maize. Designed specifically for the sauces and ready-meals market, food manufacturers can declare Synergie 55 as corn flour. Ulrick & Short uses no processing agents during the manufacturing of its starches. Instead, it harnesses the natural qualities of the crops and uses physical methods to produce clean, white starches full of functionality. Formed in 2000, Ulrick & Short is a developer, designer, manufacturer and supplier of high-quality, clean-label ingredients predominantly used by the UK food industry.
Chirositol for blood sugar
Cyvex Nutrition has repositioned its Chirositol, an extract from carob juice containing the active constituent D-Chiro-Inositol, for blood-sugar control products targeted for women. D-Chiro-Inositol has a known role as a secondary messenger directing insulin function. Poor blood-sugar management can be linked to a number of conditions such as type 2 diabetes, obesity and polycystic ovary syndrome (PCOS). Chirositol has been the subject of more than 30 published scientific studies describing its role in blood-sugar management.
New Protecflor launch
Institut Rosell-Lallemand recently launched its intestinal-support probiotic formula, Protecflor, in Belgium. The launch, by Sanofi Aventis, is under the brand name ErcéFlora Supra. The probiotic combines the activities of three well-documented Rosell bacteria strains with Saccharomyces boulardii probiotic yeast. The synergistic effects of the probiotic yeast and bacteria components of Protecflor have been demonstrated in vivo in a rat model of traveller's diarrhoea. Marketed through pharmacists as a food supplement, the probiotic is recommended for reinforcing or restoring the intestinal barrier and for fighting intestinal infections, in particular traveller's diarrhoea. Since its initial launch in 2007, the formula has been introduced in nine other countries by industry partners, including Numedica in the US; Wren in the UK; Ivancic in Serbia; CatMedia in Australia; and Walmark in the Czech Republic, Romania, Hungary, Bulgaria and Poland.
