Vitasoy Baked Macaroni and Cheese

1 cup Elbow Macaroni (uncooked)
1 cup Shredded Cheddar Cheese
1 egg
2/3 cup Vitasoy Enriched Original Natural Soy Drink
1/4 teaspoon Salt
1/8 teaspoon Paprika
Few Grains Cayenne Pepper
1/4 cup diced green bell pepper and roasted red pepper (optional)
1 tablespoon grated onion (optional)
2-3 tablespoons seasoned bread crumbs or grated Parmesan Cheese for topping

1. Prepare macaroni to al dente.

2. Place macaroni in battered baking dish with alternating layers of cheese.

3. Combine egg, Vitasoy Enriched Original Natural Soy Drink, salt, paprika, cayenne, and optional toppings. Pour this over casserole.

4. Sprinkle breadcrumbs and/or Parmesan cheese on top.

5. Bake for about 30 minutes, until is well melted and top is slightly browned.
