Early Peas With GarlicFebruary, 2002Early Peas with Garlic Serves 2 / Frozen peas are fine for this dish, but for the best flavor, be sure to use a good-quality olive oil.2 tablespoons extra-virgin olive oil1 clove garlic, peeled and sliced1-1/2 cups frozen baby peas1 tablespoon chopped fresh parsleySalt and pepper, to taste1. In a small sauté pan, heat olive oil over medium heat. Add garlic and cook until light brown. Remove garlic from pan and discard.2. Add peas, parsley, salt, and pepper.
